1 lb ground turkey

2 cups stale bread cubes (preferably whole grain)

1 cup fresh cranberries (or dried cranberries)

1 small onion, finely chopped

2 celery stalks, finely chopped

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried sage

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh parsley, chopped

1 large egg, beaten

1/4 cup chicken broth (or vegetable broth)

Olive oil spray (for baking)

Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Bread: If using fresh bread, toast the cubes in the oven for about 10 minutes until slightly golden and dry. Let them cool before using.

      Sauté Vegetables: In a medium skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and celery until they become translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Mix Ingredients: In a large mixing bowl, combine the ground turkey, sautéed vegetables, stale bread cubes, cranberries, dried thyme, dried sage, salt, pepper, and parsley. Pour in the beaten egg and chicken broth. Mix everything together until well combined. The mixture should be moist but hold together. If it feels too dry, add a bit more broth.

          Form the Balls: With clean hands, shape the mixture into balls about 1.5 inches in diameter and place them on the prepared baking sheet. You should get about 20 balls.

            Bake: Lightly spray the tops of the stuffing balls with olive oil to encourage browning. Bake in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through to an internal temperature of 165°F (74°C).

              Serve: Allow the stuffing balls to cool for a few minutes before transferring them to a serving platter. Enjoy them warm as a delightful side dish or appetizer during your festive gatherings!
