1 cup canned pumpkin puree (or roasted fresh pumpkin)

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon ground cinnamon

Salt and pepper to taste

Fresh parsley, for garnish

Pumpkin seeds (pepitas), for garnish

Pita chips or veggies, for serving

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with a little olive oil, and wrap it in aluminum foil. Roast in the preheated oven for about 30-35 minutes or until the cloves are soft and caramelized. Allow to cool slightly, then squeeze the soft garlic into a bowl.

      Combine Ingredients:

        - In a food processor, add the roasted garlic cloves, pumpkin puree, chickpeas, tahini, olive oil, lemon juice, ground cumin, smoked paprika, and ground cinnamon.

          Blend Until Smooth:

            - Process the mixture for about 1-2 minutes, scraping down the sides as needed, until it becomes creamy and smooth. If the hummus is too thick, you can add a little water (1 tablespoon at a time) until you reach your desired consistency.

              Season:

                - Taste and then add salt and pepper to your preference. Blend again to incorporate.

                  Chill:

                    - Transfer the hummus to a serving bowl, cover, and refrigerate for at least 30-60 minutes to allow the flavors to meld together.

                      Garnish and Serve:

                        - Before serving, drizzle some olive oil on top, sprinkle with fresh parsley and pumpkin seeds. Serve with pita chips, fresh veggies, or spread it on your favorite sandwich.
