Fall Crockpot Pasta with Roasted Garlic

1 pound (16 ounces) penne pasta

1 cup roasted garlic (approximately 2 whole bulbs, roasted and mashed)

3 cups vegetable broth

1 can (15 ounces) diced tomatoes, undrained

1 medium onion, finely chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1 cup fresh spinach, chopped

1 tablespoon Italian seasoning

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Prepare the Roasted Garlic: Preheat your oven to 400°F (200°C). Slice the tops off two whole bulbs of garlic, drizzle with olive oil, sprinkle with a little salt, and wrap in aluminum foil. Roast for about 30-35 minutes, or until soft and caramelized. Let cool, then squeeze out the roasted cloves and mash into a paste.

    Layer Ingredients: In a large crockpot, add the uncooked penne pasta, mashed roasted garlic, diced tomatoes (with juice), chopped onion, vegetable broth, and Italian seasoning. Stir gently to combine.

      Add Creamy Elements: Cut the softened cream cheese into chunks and distribute them evenly on top of the pasta mix. This will help create a creamy sauce as it cooks.
