1 large eggplant, sliced into 1/2-inch rounds

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

8 slices of fresh mozzarella cheese

1 large ripe tomato, sliced

Fresh basil leaves, about 10-12

4 slices of rustic bread (like ciabatta or sourdough)

Balsamic glaze, for drizzling

Extra virgin olive oil, for brushing

Prepare the Eggplant: Preheat your grill or grill pan over medium heat. Brush both sides of the eggplant slices with olive oil and season lightly with salt and pepper. Grill the eggplant for about 4-5 minutes on each side, or until they are tender and nicely charred. Remove from heat and set aside.

    Assemble the Sandwich: On one slice of bread, layer a slice of grilled eggplant, 2 slices of fresh mozzarella, a slice of tomato, and a few basil leaves. Drizzle a little balsamic glaze on top for added flavor. Then, add another slice of bread on top to complete the sandwich. Repeat for the remaining slices.
