Ingredients
  

4 large eggs

1 cup fresh spinach, chopped

1/2 bell pepper (red or yellow), diced

1/2 small onion, finely chopped

1/2 cup cherry tomatoes, halved

1/4 cup shredded cheddar cheese (optional)

4 whole wheat or spinach tortillas

2 tablespoons olive oil

Salt and pepper, to taste

Salsa or hot sauce, for serving

Instructions
 

Prepare the Veggies: In a medium bowl, combine the chopped spinach, diced bell pepper, chopped onion, and halved cherry tomatoes. Set aside.

    Cook the Eggs: In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet, season with salt and pepper, and scramble until they are just set (about 3-4 minutes). Remove from the heat and add the prepared veggies and shredded cheddar cheese, folding them into the eggs until everything is mixed well.

      Warm the Tortillas: In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side until they are pliable.

        Assemble the Wraps: Spoon an equal amount of the egg and veggie mixture onto the center of each tortilla. Fold the sides in, then roll from the bottom up to create a wrap.

          Toast the Wraps (Optional): If desired, return the wraps to the skillet (seam side down) and cook for about 2 minutes on each side until lightly golden and crispy.

            Serve: Slice the wraps in half if desired, serve with salsa or hot sauce for dipping, and enjoy your delicious breakfast!
