Easy Zucchini Pasta Bake

3 medium zucchinis, spiralized (or sliced into thin rounds)

2 cups cooked pasta (penne or fusilli work well)

1 teaspoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, drained

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: If you haven't spiralized the zucchini yet, do so now. You can also slice them into thin rounds if you prefer a different texture.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add diced onion and garlic, cooking until the onion is translucent and fragrant, around 4-5 minutes.

        Combine Tomato Mixture: Stir in the drained diced tomatoes and Italian seasoning. Season with salt and pepper to taste. Cook for another 3-4 minutes until heated through.

          Mix Ingredients: In a large mixing bowl, combine the cooked pasta, zucchini, and tomato mixture. Add the ricotta cheese and half of the mozzarella cheese, folding everything together until well combined.

            Transfer to Baking Dish: Pour the pasta-zucchini mixture into a greased baking dish (approximately 9x13 inches).

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese evenly across the top of the pasta bake.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                  Garnish & Serve: Once done, remove from the oven and allow it to cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
