Easy Vegetable Fried Rice with Egg

2 cups cooked jasmine rice (preferably chilled)

2 large eggs

1 cup mixed vegetables (carrots, peas, corn, chopped bell peppers)

3 tablespoons soy sauce

1 tablespoon sesame oil (or vegetable oil)

2 green onions, thinly sliced

2 garlic cloves, minced

1 teaspoon ginger, minced

Salt and pepper to taste

Optional: 1 tablespoon oyster sauce for extra flavor

Prepare the Ingredients: If you haven't done so already, cook the jasmine rice according to package instructions and allow it to chill in the fridge (ideally overnight). Chop all vegetables and set aside.

    Scramble the Eggs: In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Crack the eggs into the pan, scramble them gently, and cook until they are just set. Remove them from the pan and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining sesame oil. Toss in the minced garlic and ginger and sauté for about 30 seconds until fragrant.

        Cook the Vegetables: Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are tender but still crisp. If you want, you can add the oyster sauce during this step for additional flavor.

          Combine with Rice: Increase the heat to high and add the chilled rice into the pan. Break apart any clumps using a spatula and stir-fry for about 3-4 minutes until the rice is heated through.

            Season the Rice: Pour the soy sauce over the rice and mix well. Season with salt and pepper to taste. Add the scrambled eggs back into the pan along with the sliced green onions, and toss everything together until well combined.

              Final Touches: Stir everything for an additional minute to allow the flavors to meld. Taste and adjust seasoning if needed.
