4 medium sweet potatoes

1 lb ground turkey or beef

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning (about 1 oz)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or your choice)

1 avocado, diced

1/2 cup Greek yogurt or sour cream

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Sweet Potatoes:

      - Wash and poke holes in each sweet potato with a fork.

        - Rub them with olive oil and sprinkle with salt.

          - Place on a baking sheet and bake for about 45-60 minutes, or until tender when pierced with a fork.

            Cook the Meat:
