Easy Pork Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup pork tenderloin, thinly sliced

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 cup mixed vegetables ( peas, carrots, corn)

2 green onions, chopped

2 large eggs, lightly beaten

3 cloves garlic, minced

Salt and pepper to taste

Cooking oil (vegetable or canola)

Instructions
 

Prepare the Pork: In a bowl, marinate the thinly sliced pork with soy sauce and a pinch of black pepper for at least 15 minutes. This will enhance the flavor of the meat.

    Heat the Pan: In a large non-stick skillet or wok, heat 1 tablespoon of cooking oil over medium-high heat.

      Cook the Pork: Add the marinated pork to the skillet and stir-fry for about 3 to 5 minutes, or until the pork is fully cooked and has a nice golden color. Remove the pork from the skillet and set aside.

        Scramble the Eggs: In the same skillet, pour in the beaten eggs. Scramble them quickly until just set, then remove and set aside with the pork.

          Sauté the Vegetables: Add another tablespoon of oil to the skillet if necessary. Toss in the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the mixed vegetables and cook for another 3 minutes.

            Add the Rice: Add the day-old rice to the skillet, breaking up any clumps. Stir-fry for about 2-3 minutes until the rice is heated through and mixed well with the vegetables.

              Combine Everything: Return the cooked pork and scrambled eggs to the skillet. Add the oyster sauce and sesame oil, and stir well to combine. Cook for an additional 2 minutes, ensuring everything is heated and well-blended.

                Finish with Green Onions: Finally, stir in the chopped green onions and adjust the seasoning with salt and pepper to taste. Cook for another minute, then remove from heat.

                  Serve: Transfer the pork fried rice to bowls and enjoy hot! You can garnish with additional green onions or sesame seeds if desired.
