1 lb ribeye steak (thinly sliced)

1 medium onion (sliced)

1 medium green bell pepper (sliced)

1 cup mushrooms (sliced)

4 slices provolone cheese

2 tbsp olive oil

2 tbsp Worcestershire sauce

1 tsp garlic powder

Salt and pepper (to taste)

4 hoagie rolls

Optional: hot sauce for serving

Prep the Steak: If not already thinly sliced, place the ribeye in the freezer for about 30 minutes to firm up, making it easier to slice thinly. Once firm, slice against the grain into thin strips.

    Cook the Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add sliced onions and bell peppers. Sauté for about 5 minutes until softened. Add the sliced mushrooms and continue to cook for an additional 3-4 minutes. Season with salt, pepper, and garlic powder. Once cooked, remove the mixture from the skillet and set aside.

      Cook the Steak: In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak to the skillet, sprinkling with Worcestershire sauce, salt, and pepper. Cook for about 3-4 minutes until the steak is browned and cooked to your liking.

        Combine: Add the cooked vegetable mixture back into the skillet with the steak. Stir well to combine and let it heat through for another 1-2 minutes.

          Melt the Cheese: Reduce the heat to low. Place the provolone cheese slices over the steak and vegetable mixture. Cover the skillet with a lid for about 2 minutes or until the cheese has melted.

            Assemble the Sandwiches: Split the hoagie rolls and lightly toast them if desired. Spoon the cheesy steak and vegetable mixture into each roll.
