12 oz (340g) pasta (penne or fusilli works well)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 can (15 oz) crushed tomatoes

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 cup grated Parmesan cheese (or nutritional yeast for vegan)

Salt and pepper to taste

Fresh basil leaves for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, oregano, basil, and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth, stirring to combine. Bring the mixture to a gentle boil.

      Cook the Pasta: Add the pasta to the pot, ensuring it’s submerged in the liquid. Lower the heat to a simmer, cover the pot, and cook according to the pasta package instructions, usually around 10-12 minutes, stirring occasionally to avoid sticking.

        Make it Creamy: Once the pasta is al dente, reduce the heat to low and stir in the heavy cream. Allow it to heat through for 2-3 minutes. If using Parmesan cheese, gradually mix it in, allowing it to melt and create a creamy sauce. For a vegan version, sprinkle in the nutritional yeast at this point.
