Easy Grilled Thai Chicken Skewers

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons vegetable oil

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon lime juice (freshly squeezed)

1 tablespoon brown sugar

3 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon turmeric powder

½ teaspoon red pepper flakes (adjust for spice preference)

Zest of 1 lime

Fresh cilantro, for garnish

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the vegetable oil, soy sauce, fish sauce, lime juice, brown sugar, minced garlic, ground coriander, turmeric, red pepper flakes, and lime zest. Whisk until well combined.

    Add Chicken: Place the chicken pieces into the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to overnight for deeper flavor).

      Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to turn white before grilling. If using a gas grill, preheat for about 10-15 minutes.

        Skewer the Chicken: Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice char marks. The internal temperature should reach 165°F (75°C).

            Serve: Remove the skewers from the grill and allow them to rest for a few minutes before serving. Garnish with fresh cilantro and serve with lime wedges on the side for an extra zing.
