1 pound ground pork (or ground turkey for a lighter option)

2 cups coleslaw mix (or shredded cabbage and carrots)

3 green onions, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for a spicy kick)

Sesame seeds for garnish

Salt and pepper to taste

Brown the Meat: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground pork (or turkey) and cook, breaking it apart with a spatula, until it is browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Stir in the minced garlic and ginger; cook for another minute until fragrant.

      Incorporate Veggies: Toss in the coleslaw mix and half of the sliced green onions. Stir well and cook for about 3-5 minutes, or until the cabbage is slightly wilted. Stir continuously to ensure even cooking.
