Easy Cold Tortellini Salad

12 ounces cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (mixed colors), diced

½ cup red onion, finely chopped

½ cup black olives, sliced

½ cup mozzarella balls, halved

¾ cup Italian dressing (store-bought or homemade)

¼ cup fresh basil, chopped

Salt and pepper to taste

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Vegetables: While the tortellini cools, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and bell peppers, finely chop the red onion, and slice the black olives. If using fresh basil, chop it coarsely.

      Mix the Salad: In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and mozzarella balls.

        Dress the Salad: Pour the Italian dressing over the tortellini and vegetable mixture. Toss gently until all ingredients are evenly coated with the dressing.

          Season and Chill: Add the chopped basil, and season with salt and pepper to taste. Mix well. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
