1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 medium green bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime

8 small flour tortillas

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, guacamole, salsa

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken strips with olive oil, minced garlic, cumin, chili powder, smoked paprika, salt, pepper, and lime juice. Mix until the chicken is evenly coated. Let it marinate for at least 15-30 minutes for best flavor.

    Sauté the Veggies: Heat a large cast-iron skillet or a non-stick frying pan over medium-high heat. Add a splash of olive oil, then add the sliced onions and bell peppers. Sauté for about 5-7 minutes until the veggies are tender but still crisp. Remove them from the skillet and set aside.

      Cook the Chicken: In the same skillet, add a bit more olive oil if needed, then add the marinated chicken. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and browned.

        Combine: Once the chicken is cooked, return the sautéed veggies to the skillet. Toss them together for an additional 2-3 minutes to heat everything through and meld the flavors.
