2 cups cooked rice (white, brown, or cauliflower rice)

1 lb boneless, skinless chicken breasts, sliced into strips

1 tablespoon olive oil

1 bell pepper (red, yellow, or green), sliced

1 medium onion, sliced

1 tablespoon fajita seasoning (store-bought or homemade)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sour cream or Greek yogurt (optional, for garnish)

Instructions
 

Prep the Chicken: In a mixing bowl, combine the sliced chicken with the fajita seasoning, salt, and pepper. Mix well to evenly coat the chicken.
