Easy Chicken Fajita Quesadillas for Taco Night

1 pound chicken breast, sliced into thin strips

1 tablespoon olive oil

1 medium onion, thinly sliced

1 medium bell pepper (any color), thinly sliced

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa, for serving

Instructions
 

Prepare the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced chicken breast. Season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through and no longer pink.

    Add Vegetables: Add the sliced onion and bell pepper to the skillet with the chicken. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

      Assemble Quesadillas: Remove the chicken and pepper mixture from the skillet and set aside. Wipe the skillet clean and return it to medium heat. Place one flour tortilla in the skillet. Sprinkle half of the tortilla with cheese, then add a generous amount of the chicken and vegetable mixture on top, and then add more cheese. Fold the tortilla in half.

        Cook Quesadillas: Cook the quesadilla for 3-4 minutes on each side, or until golden brown and crispy, with the cheese melted inside. Repeat the process for the remaining tortillas and filling.

          Slice and Serve: Once all quesadillas are cooked, remove from heat and let them cool for a minute. Slice each quesadilla into wedges, and garnish with chopped cilantro. Serve warm with sour cream and salsa on the side.
