Easy Chicken Fajita Quesadillas for Busy Nights

2 boneless, skinless chicken breasts, cut into small strips

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

4 large flour tortillas

2 cups shredded cheese (such as cheddar or a Mexican blend)

Optional toppings: sour cream, guacamole, salsa, fresh cilantro, lime wedges

Instructions
 

Prepare the Chicken: In a medium bowl, combine the chicken strips with chili powder, cumin, garlic powder, salt, and pepper. Toss to evenly coat the chicken with the spices.

    Cook the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced onion and bell peppers. Sauté for about 3-4 minutes until the vegetables are slightly tender but still crisp. Remove them from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned chicken strips and cook for 5-7 minutes, or until they are fully cooked and lightly browned. Ensure the chicken reaches an internal temperature of 165°F (75°C).

        Combine Chicken and Vegetables: Return the sautéed vegetables to the skillet with the chicken. Stir everything together and cook for an additional 1-2 minutes to combine the flavors. Remove from heat.

          Assemble Quesadillas: On half of each tortilla, sprinkle a generous amount of shredded cheese, followed by a portion of the chicken and vegetable mixture. Top with a little more cheese and fold the tortilla in half.

            Cook Quesadillas: In the same skillet (no need to clean it), place the folded quesadilla over medium heat. Cook for about 3-4 minutes per side, or until the tortillas are golden brown and the cheese has melted. You can cut them in half for easier handling if desired.

              Serve: Cut the quesadillas into wedges and serve warm with your choice of toppings such as sour cream, guacamole, salsa, fresh cilantro, and lime wedges for an extra zing!
