2 large boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

1 bell pepper, sliced (any color)

1 medium onion, sliced

4 large flour tortillas

2 cups shredded cheddar cheese (or a cheese blend)

Salsa, sour cream, and guacamole for serving

Instructions
 

Prepare the Chicken:

    - In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken.

      - Season the chicken with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to ensure all pieces are coated evenly.

        - Cook the chicken for about 5-7 minutes, until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the skillet and set aside.

          Sauté the Vegetables:

            - In the same skillet, add the sliced onion and bell pepper. Sauté for about 5 minutes until they're soft and slightly caramelized. Remove from heat.

              Assemble the Quesadillas:

                - Lay a tortilla flat on a clean surface. On one half of the tortilla, layer a generous portion of shredded cheese, followed by a portion of the cooked chicken and sautéed vegetables. Add another layer of cheese on top, then fold the tortilla over to create a half-moon shape.

                  - Repeat with the remaining tortillas and filling.

                    Cook the Quesadillas:

                      - Wipe the skillet clean, then return it to medium heat. Lightly oil the skillet if necessary (you can also use cooking spray).

                        - Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side, until golden brown and the cheese is melting. Carefully flip and cook the other side for another 3-4 minutes.

                          - Remove from the skillet and let it cool slightly before cutting into wedges.

                            Serve:

                              - Plate the quesadilla wedges and serve them with salsa, sour cream, and guacamole on the side for dipping.
