Easy Cheesy Corn Fritters

1 cup fresh or frozen corn kernels

1/2 cup all-purpose flour

1/2 cup grated cheddar cheese (or your favorite cheese)

1/4 cup green onions, finely chopped

1/4 cup milk

2 large eggs

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (vegetable or olive oil)

Prepare the Mixture: In a large bowl, combine the corn kernels, grated cheese, and chopped green onions. Stir well to mix all the ingredients.

    Mix the Wet Ingredients: In a separate bowl, whisk together the eggs and milk until fully combined.

      Combine Ingredients: Slowly pour the wet mixture into the bowl with the corn mixture. Stir gently until just combined.

        Add Dry Ingredients: In a small bowl, whisk together the flour, baking powder, garlic powder, paprika, and a pinch of salt and pepper. Gradually fold this dry mixture into the corn mixture until no dry spots remain. Be careful not to overmix—small lumps are okay!

          Heat the Oil: In a frying pan, heat about 1/4 inch of oil over medium heat. You can test if it’s hot enough by dropping a tiny amount of the batter into the oil; it should sizzle.

            Fry the Fritters: Scoop about 2 tablespoons of the batter for each fritter and carefully drop it into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
