8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

Cook the Beef: In a large skillet over medium heat, add the ground beef. Break it apart with a spatula and cook until browned, about 5-6 minutes. Drain excess fat if necessary.
