1 lb (450g) beef sirloin, thinly sliced

2 cups mixed vegetables (bell peppers, broccoli, snap peas)

3 cups cooked jasmine rice (or rice of your choice)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

2 tablespoons vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch (to coat beef)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Beef: Start by coating the sliced beef in cornstarch in a bowl. This will help tenderize the meat and give it a great texture once cooked. Allow it to marinate while you prepare the other ingredients.

    Prepare the Vegetables: Wash and slice your mixed vegetables into bite-sized pieces if they aren’t pre-cut. This will ensure they cook evenly and quickly.

      Cook the Rice: If not already done, cook the jasmine rice according to package instructions. It’s best to use leftover rice as it can be stir-fried more easily.

        Heat the Wok: In a large wok or deep skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the beef slices in batches (to avoid overcrowding). Sear until browned, about 2-3 minutes. Remove and set aside.

          Sauté Aromatics: In the same wok, add the remaining tablespoon of oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

            Stir-Fry the Veggies: Add the mixed vegetables to the wok, stirring frequently for about 4-5 minutes until they are tender but still crisp.

              Combine Everything: Return the cooked beef to the wok with the vegetables. Pour in the soy sauce and oyster sauce (if using). Toss everything together for 2 minutes to combine and heat through. Season with salt and pepper to taste.
