3 large russet potatoes, peeled and cubed

1 cup heavy cream

½ cup whole milk

1 cup sharp cheddar cheese, shredded

½ cup Gruyère cheese, shredded

2 tablespoons unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for a kick)

Salt and black pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a large baking dish (about 2-quart) with butter or cooking spray.

    Cook the Potatoes: In a large pot, add the cubed potatoes and cover them with water. Bring to a boil and cook for about 10-12 minutes or until just tender but not falling apart. Drain and set aside.

      Sauté Aromatics: In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until translucent, about 5 minutes. Add in the minced garlic and sauté for another minute.

        Make the Cream Mixture: In a bowl, combine the heavy cream, whole milk, smoked paprika, cayenne pepper (if using), salt, and black pepper. Whisk well to combine.

          Layer the Ingredients: In the prepared baking dish, layer half of the cooked potatoes. Pour half of the cream mixture over the potatoes, and sprinkle with half of the cheddar and Gruyère cheeses. Repeat the layers with the remaining potatoes, cream mixture, and cheeses.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the edges are bubbling.
