1 cup sushi rice

1 1/2 cups water

1 teaspoon rice vinegar

1/2 teaspoon sugar

1/2 teaspoon salt

1 cup cucumber, thinly sliced

1 cup shredded carrots

1 avocado, sliced

1/2 cup edamame, shelled and cooked

4 ounces imitation crab or cooked shrimp

2 tablespoons sesame seeds

1 sheet nori, finely chopped

2 green onions, sliced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon wasabi (optional)

Pickled ginger for garnish (optional)

Instructions
 

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 1 1/2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Prepare the Rice Vinegar Mixture: In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Once the rice has finished cooking, fluff it with a fork and gently fold in the vinegar mixture. Allow it to cool slightly.

      Prep the Veggies and Protein: While the rice is cooling, prepare the fresh ingredients. Slice the cucumber and avocado, shred the carrots, and divide the edamame and imitation crab (or shrimp) into serving portions.

        Assemble the Salad Bowl: In a large serving bowl or on individual plates, create a base layer with the sushi rice. Top with the cucumber slices, shredded carrots, avocado, edamame, and imitation crab or shrimp.

          Add Toppings: Sprinkle sesame seeds and chopped nori over the top. Add sliced green onions for extra flavor. If you like, drizzle with soy sauce and sesame oil, and place a small dollop of wasabi on the side.
