Ingredients

2 large cucumbers

1 can (5 oz) tuna, drained (preferably in olive oil)

1 ripe avocado, mashed

1 tablespoon Greek yogurt (or mayo, if preferred)

1 tablespoon fresh lemon juice

2 tablespoons red onion, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Cherry tomatoes, halved, for garnish

Optional: Sliced radishes for extra crunch

Instructions

Prepare the Cucumbers: Slice the cucumbers in half lengthwise. Using a small spoon or melon baller, carefully scoop out the seeds to create a hollow boat for the filling. Set aside.

Make the Tuna Filling: In a medium bowl, combine the drained tuna, mashed avocado, Greek yogurt, fresh lemon juice, red onion, chopped dill, salt, and pepper. Mix until well combined and creamy.

Taste and Adjust: Sample the mixture, adding more salt, pepper, or lemon juice if desired for your preferred flavor balance.

Fill the Cucumber Boats: Spoon the tuna and avocado mixture into each cucumber half, packing it generously and evenly.

Garnish and Serve: Top the filled boats with halved cherry tomatoes and optional sliced radishes for a pop of color and additional crunch.

Enjoy: Serve immediately or refrigerate for up to 30 minutes before serving for a cold, refreshing snack!
