2 medium cucumbers, peeled and diced

1 ripe avocado, pitted and chopped

1 cup vegetable or chicken broth (chilled)

1/2 cup Greek yogurt or plant-based yogurt

1 tablespoon fresh lemon juice

1 garlic clove, minced

1 tablespoon fresh dill or mint, chopped (plus more for garnish)

Salt and pepper to taste

Optional: 1/4 teaspoon cayenne pepper for a bit of heat

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the diced cucumbers, chopped avocado, minced garlic, and chopped herbs (dill or mint).

    Blend the Base: In a blender, add the cucumber and avocado mixture, vegetable broth, Greek yogurt, lemon juice, and cayenne pepper (if using).

      Blend Until Smooth: Blend on high speed until the mixture is completely smooth and creamy. If the soup is too thick, you can add more chilled broth until you reach your desired consistency.
