Crunchy Sesame Noodle Slaw

8 oz. rice noodles

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup carrots, julienned

1 cup bell peppers (mixed colors), thinly sliced

1/2 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup sesame seeds, toasted

For the Sesame Dressing:

1/4 cup soy sauce

2 tbsp rice vinegar

2 tbsp sesame oil

1 tbsp honey or maple syrup

1 tsp fresh ginger, grated

1 clove garlic, minced

1 tbsp lime juice

Optional: 1 tsp chili paste or sriracha for heat

Instructions
 

Cook the Rice Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (usually around 3-5 minutes). Drain and rinse under cold water to stop the cooking process. Let them cool completely.

    Prepare the Vegetables: While the noodles are cooling, slice the green and red cabbage, julienne the carrots, and thinly slice the bell peppers. Chop the green onions and cilantro.

      Make the Dressing: In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, lime juice, and chili paste or sriracha (if using) until well combined.

        Combine the Salad: In a large mixing bowl, combine the cooled rice noodles, green cabbage, red cabbage, carrots, bell peppers, green onions, and cilantro.

          Toss with Dressing: Pour the dressing over the noodle and vegetable mixture. Toss gently until everything is evenly coated with the dressing.

            Add the Crunch: Just before serving, sprinkle the toasted sesame seeds over the top and give it one last gentle toss.

              Serve and Enjoy: This slaw can be served immediately or chilled for 30 minutes to meld the flavors. It makes a great side dish or can be enjoyed as a main meal.
