1 large bunch of kale, stems removed and leaves torn into bite-sized pieces

2 tablespoons olive oil

1 tablespoon sesame oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame seeds (white or black, or a mix)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (optional for a smoky flavor)

Pinch of salt (to taste)

Freshly cracked black pepper (to taste)

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Kale: Wash and dry the kale thoroughly. Make sure to remove all excess moisture, as this will help the chips become extra crispy. Tear the leaves into bite-sized pieces, discarding the stems.

      Mix the Dressing: In a large mixing bowl, combine the olive oil, sesame oil, soy sauce, garlic powder, onion powder, smoked paprika (if using), and a pinch of salt and black pepper. Whisk together until evenly mixed.

        Coat the Kale: Add the torn kale leaves to the bowl with the dressing. Use your hands to massage the oil mixture into the kale, ensuring that each piece is evenly coated.

          Sprinkle the Sesame Seeds: Once the kale is well-coated, sprinkle in the sesame seeds and toss again so that they're evenly distributed among the leaves.
