Crunchy Lemon Dill Zucchini Slices

2 medium zucchinis, sliced into 1/4-inch rounds

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tablespoon lemon zest

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

1/4 cup all-purpose flour

Olive oil spray (for baking)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

    Prepare the Zucchini: Wash the zucchinis thoroughly. Cut them into 1/4-inch thick rounds and set aside.

      Mix Dry Ingredients: In a large bowl, combine the panko breadcrumbs, grated Parmesan cheese, lemon zest, dill, garlic powder, salt, and black pepper. Mix well to combine all the flavors.

        Set Up Breading Station: In another shallow dish, place the all-purpose flour. In a separate bowl, beat the eggs until well mixed.

          Bread the Zucchini Slices: Dredge each zucchini slice in flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the slice in the panko mixture, pressing gently to ensure it's well covered. Place the breaded slices on the prepared baking sheet.

            Spray with Olive Oil: Lightly spray the top of the breaded zucchini slices with olive oil to help them crisp up in the oven.

              Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the zucchini slices are golden brown and crispy, flipping them halfway through for even baking.
