4 cups fresh corn kernels (about 6 ears of corn or 2 cans of corn, drained)

1 red bell pepper, diced

1 medium cucumber, diced

½ red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup fresh cilantro, chopped

1 jalapeño, seeded and finely minced (optional for extra heat)

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon chili powder

½ teaspoon cumin

Salt and pepper, to taste

1 cup crushed tortilla chips (for crunch)

Instructions
 

Prepare the Ingredients: If using fresh corn, boil the ears for about 5-7 minutes, then drain and let cool. Cut the kernels off the cob. If using canned corn, rinse and drain thoroughly.

    Make the Dressing: In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper until well combined.

      Combine the Veggies: In a large mixing bowl, add the corn, red bell pepper, cucumber, red onion, cherry tomatoes, avocado, cilantro, and jalapeño (if using). Toss gently to combine.

        Pour the Dressing: Drizzle the lime dressing over the salad mixture. Toss everything together carefully to ensure the ingredients are evenly coated without mashing the avocado.
