4 cups green cabbage, finely shredded

2 cups purple cabbage, finely shredded

1 large carrot, julienned

1 red bell pepper, diced

1 cup fresh cilantro, roughly chopped

1/2 cup green onions, sliced

1/2 cup roasted salted peanuts, coarsely chopped

1/4 cup sesame seeds, toasted (optional)

For the Dressing:

1/4 cup peanut butter (smooth)

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lime juice

Salt and pepper to taste

Prep the Vegetables: In a large bowl, combine the finely shredded green and purple cabbage, julienned carrot, diced red bell pepper, chopped cilantro, and sliced green onions. Toss lightly to mix the veggies.

    Make the Dressing: In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, minced garlic, grated ginger, and lime juice until smooth.
