4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, julienned or grated

1/2 cup bell pepper, finely sliced (any color)

1/2 cup green onions, chopped

1/2 cup unsalted roasted peanuts, roughly chopped

1/4 cup fresh cilantro, chopped

1/2 cup rice vinegar

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon sriracha (adjust to taste)

Salt and pepper to taste

Optional: Lime wedges, for serving

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded green and red cabbage, julienned carrot, sliced bell pepper, and chopped green onions. Toss the vegetables together until evenly mixed.

    Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, honey (or maple syrup), sesame oil, sriracha, and a pinch of salt and pepper. Taste and adjust the seasoning as desired.
