1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or a gluten-free flour blend)

1 cup water

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

4 large tortillas (whole wheat, spinach, or your choice)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup diced red onion

1/2 cup shredded cheese (blue cheese, cheddar, or dairy-free alternative)

Ranch or blue cheese dressing (for drizzling)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Cauliflower Bites: In a mixing bowl, whisk together flour, water, garlic powder, paprika, salt, and pepper until smooth. Add the cauliflower florets and toss until evenly coated.

      Bake the Cauliflower: Spread the coated cauliflower on the prepared baking sheet in a single layer. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until golden and crispy.

        Toss in Buffalo Sauce: Once the cauliflower is nicely browned, remove it from the oven. In a large bowl, add the baked cauliflower and pour in the buffalo sauce. Toss gently until all the florets are coated.

          Assemble the Wraps: On each tortilla, add a bed of shredded lettuce, a handful of diced tomatoes, and diced red onion. Then, generously pile the buffalo cauliflower on top.

            Add Cheese and Dressing: Sprinkle shredded cheese over the cauliflower and drizzle with ranch or blue cheese dressing to taste.
