Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon black pepper

1 cup BBQ sauce (your favorite brand or homemade)

4 large tortillas or wraps (whole wheat or flour)

1 cup shredded lettuce

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 cup shredded cheese (cheddar or vegan cheese)

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, cumin, and black pepper. Stir well to coat the chickpeas evenly with the seasonings.

Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until they are golden and crunchy, shaking the pan halfway through cooking for even roasting.

Add BBQ Sauce: Once the chickpeas are roasted, remove them from the oven and carefully toss them in BBQ sauce until they're evenly coated. Return them to the baking sheet and roast for an additional 5-10 minutes for a sticky, caramelized finish.

Assemble the Wraps: While the chickpeas are roasting, prepare your tortillas. Lay out each tortilla and start by adding a handful of shredded lettuce to the center. Top with roasted BBQ chickpeas, cherry tomatoes, red onion slices, and shredded cheese.

Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom up to create a wrap. Ensure everything is tightly packed inside.

Optional Grilling: For an extra crunch, you can grill the wraps in a skillet for 2-3 minutes on each side or until the tortillas are golden brown and crispy.

Serve: Cut the wraps in half, garnish with fresh cilantro or parsley if desired, and serve immediately with extra BBQ sauce on the side for dipping.
