Ingredients

2 cups rolled oats

1 cup unsweetened apple sauce

1 medium apple, peeled and diced (preferably Granny Smith)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup dried cranberries or raisins (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, and salt. Stir until evenly mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the apple sauce, almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Add the diced apple, chopped walnuts (if using), and dried cranberries or raisins (if using). Mix everything together thoroughly until all the oats are coated.

Spread in Baking Dish: Transfer the mixture into the prepared baking dish. Use a spatula to press down firmly to create an even layer. This helps the bars hold together better when baked.

Bake: Bake in the preheated oven for about 25-30 minutes or until the edges start to turn golden brown.

Cool: Once baked, remove the dish from the oven and let it cool completely in the pan on a wire rack. This step is crucial for getting the right texture.

Slice and Serve: Once cooled, use the overhanging parchment paper to lift the bars out of the dish. Place on a cutting board and slice into squares or rectangles as desired.

Store: Store any leftovers in an airtight container at room temperature for up to a week, or freeze for longer storage.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 12 bars
