Ingredients

1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1/2 cup cornstarch

1 large egg, beaten

1 cup panko breadcrumbs

1 tablespoon sesame oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon ground ginger

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame seeds

2 green onions, chopped (for garnish)

Instructions

Prep the Chicken: In a large bowl, combine the chicken pieces with salt, black pepper, garlic powder, onion powder, and ground ginger. Toss until evenly coated.

Breading Setup: Prepare three bowls for the breading station. In the first bowl, add the cornstarch. In the second bowl, pour the beaten egg. In the third bowl, add the panko breadcrumbs mixed with sesame oil.

Bread the Chicken: Dredge each chicken piece in cornstarch, shaking off excess. Dip into beaten egg, allowing any extra to drip off, then coat thoroughly with panko breadcrumbs. Place the breaded chicken on a plate or rack.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Chicken: Place the breaded chicken pieces in the air fryer basket in a single layer, ensuring they are not overcrowded. Depending on the size of your air fryer, you may need to do this in batches. Cook for 10-12 minutes, flipping halfway through, until the chicken is golden brown and crunchy.

Make the Sauce: In a small saucepan over medium heat, combine honey, soy sauce, and rice vinegar. Bring to a gentle simmer, stirring for 3-4 minutes until slightly thickened. Stir in sesame seeds and remove from heat.

Combine: Once the chicken is cooked, transfer it to a large mixing bowl. Drizzle the warm sauce over the chicken and toss until evenly coated.

Serve: Garnish with chopped green onions and extra sesame seeds if desired. Serve hot with steamed rice or a fresh salad.
