Crunchy Air-Fried Veggie Sticks

1 cup carrots, julienned

1 cup zucchini, julienned

1 cup bell peppers, julienned (mix of red, yellow, and green)

1 cup green beans, trimmed and cut into 2-inch pieces

1/2 cup all-purpose flour (or gluten-free flour, if preferred)

1 cup panko breadcrumbs

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Olive oil spray (for air frying)

Prepare the Vegetables: Start by washing and julienning all the vegetables into sticks. Make sure they are uniform in size for even cooking.

    Set Up Dipping Stations: In three separate bowls, set up your dredging stations. In the first bowl, place the flour and season it with salt and pepper. In the second bowl, beat the eggs with garlic powder, onion powder, smoked paprika, and Italian seasoning. In the third bowl, combine panko breadcrumbs with a pinch of salt.

      Dredge the Veggie Sticks: Take each vegetable stick and coat it in the flour, shaking off any excess. Next, dip it in the egg mixture, allowing any excess egg to drip off. Finally, roll the stick in the panko breadcrumbs until fully coated. Repeat this for all veggie sticks.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Arrange in the Air Fryer: Lightly spray the air fryer basket with olive oil. Arrange the veggie sticks in a single layer in the basket, ensuring they are not overcrowded. You may need to cook in batches if your air fryer is smaller.

            Air Fry: Spray the tops of the veggie sticks lightly with olive oil. Air fry them at 400°F (200°C) for about 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

              Serve and Enjoy: Once cooked, remove the veggie sticks from the air fryer and let them cool slightly. Serve with a dipping sauce of your choice, such as ranch, hummus, or a spicy aioli.
