Crunchy Air-Fried Eggplant Slices

Ingredients
  

1 large eggplant

1 cup all-purpose flour

2 large eggs

1 cup seasoned breadcrumbs (or panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Olive oil spray

Optional: Grated Parmesan cheese for extra flavor

Optional: Fresh herbs (like parsley or basil) for garnish

Instructions
 

Prep the Eggplant:

    - Wash and slice the eggplant into ½-inch thick rounds. If desired, sprinkle a little salt on both sides to draw out moisture and bitterness. Let them sit for 20-30 minutes, then pat dry with paper towels.

      Set Up Breading Station:

        - In three shallow bowls, set up your breading station:

          - In the first bowl, add the all-purpose flour.

            - In the second bowl, whisk the eggs until well combined.

              - In the third bowl, combine the seasoned breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.

                Coat the Eggplant:

                  - Take each eggplant slice and dip it into the flour, making sure to coat completely. Shake off excess flour, then dip it into the whisked eggs, allowing any excess to drip off. Finally, coat the slice with the breadcrumb mixture, pressing gently to ensure it sticks.

                    Preheat the Air Fryer:

                      - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                        Arrange in the Air Fryer:

                          - Spray the air fryer basket lightly with olive oil spray. Place the breaded eggplant slices in a single layer in the basket, and spray the tops lightly with olive oil spray as well.

                            Cook:

                              - Air fry the eggplant slices at 375°F (190°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy. If cooking in batches, repeat the process with the remaining slices.

                                Serve:

                                  - Remove from the air fryer and let cool for a couple of minutes. If desired, sprinkle with grated Parmesan cheese and fresh herbs. Serve warm with your favorite dipping sauce like marinara or garlic aioli.
