Crunchy Air-Fried Breakfast Wrap

4 large whole wheat tortillas

4 large eggs

1 cup cooked and crumbled turkey sausage or your choice of protein

1 medium bell pepper, finely chopped (any color)

1 small onion, diced

1 cup shredded sharp cheddar cheese

1 cup fresh spinach, chopped

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Optional: hot sauce or salsa for serving

Instructions
 

Prep the Filling: In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the onions and bell pepper until they are tender, about 3-4 minutes.

    Add Protein and Spinach: Add the cooked turkey sausage and spinach to the skillet, stirring until the spinach wilts. Season with garlic powder, paprika, salt, and pepper. Mix well and remove from heat.

      Scramble the Eggs: In a separate bowl, whisk the eggs together with a pinch of salt and pepper. In the same skillet, add the remaining tablespoon of olive oil and pour in the eggs. Stir continuously until fully cooked and scrambled, about 3-5 minutes.

        Combine Filling: Once the eggs are cooked, add them to the skillet with the sausage and vegetable mixture. Stir to combine the filling evenly and allow it to cool slightly.

          Assemble the Wraps: Lay a tortilla flat on a clean surface. Place about 1/4 of the filling in the center of the tortilla and sprinkle with a generous amount of shredded cheddar cheese.

            Wrap it Up: Fold in the sides of the tortilla over the filling first, then roll it tightly from the bottom up. Repeat with remaining tortillas and filling.

              Prepare the Air Fryer: Preheat your air fryer to 375°F (190°C).

                Air-Fry the Wraps: Place the wraps seam-side down in the air fryer basket without overcrowding. Air fry for 8-10 minutes, or until the tortillas are golden brown and crunchy. Flip halfway through for even crispiness.

                  Serve: Once done, remove the wraps from the air fryer and let them cool for a minute before slicing. Serve warm with hot sauce or salsa if desired. Enjoy your deliciously crunchy breakfast wraps!
