1 lb (450g) smoked sausage, sliced (e.g., kielbasa or bratwurst)

3 medium potatoes, diced (about 1.5 lbs)

1 red bell pepper, chopped

1 green bell pepper, chopped

1 medium onion, diced

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

2 teaspoons dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup vegetable broth or chicken broth

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Prepare the Ingredients: Start by washing and dicing the potatoes into small cubes. Chop the bell peppers, onion, and spinach. Slice the sausage into half-moon shapes.

    Sauté the Aromatics: In a skillet over medium heat, add olive oil. Once hot, add the diced onions and bell peppers. Sauté for about 3-4 minutes until they are softened. Stir in the minced garlic and cook for an additional minute until fragrant.
