Crockpot Creamy Sweet Potato Soup

4 medium sweet potatoes, peeled and cubed

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup light coconut milk

1 teaspoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon nutmeg

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: chopped green onions, a dollop of Greek yogurt, or toasted pumpkin seeds

Instructions
 

Prep the ingredients: Start by peeling and cubing the sweet potatoes. Chop the onion and mince the garlic. Set aside.

    Sauté for flavor: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Combine in the crockpot: Transfer the sautéed onion and garlic to the crockpot. Then, add the cubed sweet potatoes, vegetable broth, ground ginger, ground cinnamon, nutmeg, salt, and pepper. Stir well to combine all the ingredients.

        Cook slowly: Cover the crockpot and cook on low for 6-7 hours, or on high for 3-4 hours, until the sweet potatoes are tender.

          Blend for creaminess: Once cooked, use an immersion blender to puree the soup directly in the crockpot until smooth and creamy. For a super creamy texture, you can also transfer the mixture in batches to a standard blender.

            Add coconut milk: After blending, stir in the light coconut milk until fully incorporated. Taste and adjust seasoning as needed.
