Crispy Vegan Buffalo Bites

1 block (14 oz) firm tofu, pressed and drained

1 cup all-purpose flour (or gluten-free flour)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup unsweetened plant-based milk (almond or soy)

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup hot sauce (like Frank’s RedHot or your favorite vegan brand)

2 tbsp vegan butter, melted

Fresh parsley, chopped (for garnish)

Celery sticks and vegan ranch dressing (for serving)

Instructions
 

Prepare the Tofu: Preheat your oven to 400°F (200°C). Slice the pressed tofu into bite-sized cubes or rectangles, approximately 1 inch thick. Pat them dry with a paper towel to remove excess moisture.

    Set Up Breading Station: In one shallow bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second shallow bowl, pour in the plant-based milk. In a third bowl, add the breadcrumbs.

      Coat the Tofu: Take each tofu piece and first dip it into the flour mixture, making sure to coat it evenly. Then, dip it into the plant-based milk, allowing any excess to drip off. Finally, coat it with the breadcrumbs, pressing gently to ensure a good coverage. Repeat until all tofu pieces are coated.

        Bake the Bites: Line a baking sheet with parchment paper. Arrange the breaded tofu bites on the sheet, making sure they are not crowding each other. Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

          Prepare the Buffalo Sauce: In a small bowl, mix the melted vegan butter and hot sauce until well combined.

            Toss in Sauce: Once the tofu bites are done baking, transfer them to a large mixing bowl. Pour the buffalo sauce over the crispy tofu and gently toss to coat evenly.
