Crispy Smashed Baby Potatoes

Ingredients
  

1.5 lbs baby potatoes (Yukon gold or red)

4 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon sea salt

½ teaspoon black pepper

Freshly chopped herbs (parsley, chives, or rosemary) for garnish

Optional: grated Parmesan cheese for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C).

    Boil the Potatoes: In a large pot, add the baby potatoes and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes or until the potatoes are fork-tender.

      Drain and Cool: Once cooked, drain the potatoes and let them cool for about 5 minutes. This allows them to steam off excess moisture.

        Smash the Potatoes: On a lined baking sheet, place the cooled baby potatoes. Using a fork or potato masher, gently smash each potato until it is about ½ inch thick. Be careful not to break them apart completely!

          Season the Potatoes: In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Drizzle this mixture over the smashed potatoes, making sure each potato gets coated generously.

            Roast to Perfection: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the edges of the potatoes are golden brown and crispy.

              Optional Topping: If using Parmesan cheese, sprinkle it over the potatoes during the last 5 minutes of roasting for a cheesy finish.

                Garnish and Serve: Once done, remove from the oven and let them cool for a minute. Garnish with freshly chopped herbs and additional salt if desired. Serve warm as a delightful side dish or appetizer.
