2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Panko for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

Olive oil spray (or cooking oil of your choice)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini in half lengthwise, then slice each half into fry-shaped pieces (about ¼ inch thick).

      Set Up Breading Stations: In three separate bowls, prepare your breading stations:

        - Flour Mixture: Place the all-purpose flour in the first bowl and season it with a pinch of salt and pepper.

          - Egg Mixture: In the second bowl, crack the eggs and beat them until combined.

            - Breadcrumb Mixture: In the third bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, and a pinch of salt and pepper.

              Bread the Zucchini Fries: Dip each zucchini fry into the flour mixture, shaking off any excess. Then, coat it in the egg mixture, and finally, roll it in the breadcrumb mixture, pressing gently to ensure it sticks. Place the coated fries onto the prepared baking sheet.
