1 lb (about 4-5 medium) carrots, peeled and cut into fry shapes

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko recommended for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Carrots: In a mixing bowl, combine the peeled and cut carrot fries with olive oil. Toss to ensure each piece is well-coated.

      Mix the Coating: In a separate bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper until fully combined.
