Ingredients

2 ripe avocados, sliced into wedges

1 cup breadcrumbs (panko preferred for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs, beaten

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Breading Mixture: In a bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix these ingredients thoroughly to ensure an even distribution of flavors.

Bread the Avocado Wedges: Dip each avocado wedge into the beaten eggs, allowing any excess to drip off. Next, coat the wedge in the breadcrumb mixture, pressing gently to adhere the crumbs. Place the coated wedges on the prepared baking sheet.

Arrange on the Baking Sheet: Ensure the avocado fries are spaced evenly, leaving some room for them to crisp up during baking. Lightly spray the tops with cooking spray or drizzle with olive oil to enhance browning and crispness.

Bake the Avocado Fries: Bake in the preheated oven for 20-25 minutes or until the fries are golden brown and crispy. Flip them halfway through for even crisping.

Serve: Once done, remove from the oven and allow them to cool for a few minutes. Serve warm with your favorite dipping sauce, such as ranch, sriracha mayo, or garlic aioli.
