8oz (225g) mixed mushrooms (shiitake, cremini, and button), chopped

1 medium onion, finely diced

2 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 tablespoon soy sauce

1 tablespoon olive oil

Salt and pepper, to taste

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

4 large flour tortillas

1 cup baby spinach

1/4 cup grated Parmesan cheese

Cooking spray or additional olive oil for frying

Instructions
 

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium-high heat. Add the chopped mushrooms and onion, and sauté for about 5-7 minutes, until the mushrooms are browned and the onions become translucent.

    Add Aromatics: Stir in the minced garlic and fresh thyme. Cook for another minute until fragrant. Season with soy sauce, salt, and pepper. Remove from heat and let the mixture cool slightly.

      Prepare Cheese Filling: In a mixing bowl, combine the shredded mozzarella and softened cream cheese. Stir in the sautéed mushroom mixture until well combined.

        Assemble Wraps: Lay out the flour tortillas on a clean surface. In the center of each tortilla, place a handful of baby spinach followed by a quarter of the mushroom and cheese mixture. Sprinkle some grated Parmesan cheese on top. Fold in the sides of the tortilla and roll it up tightly to enclose the filling.

          Cook the Wraps: Heat a non-stick skillet or griddle over medium heat and coat with cooking spray or a little olive oil. Place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side until golden brown and crispy. If needed, press down gently with a spatula for an even crisp.
