Crispy Honey Garlic Salmon Bites

1 lb (450g) fresh salmon fillet, skin removed and cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

1/2 cup panko breadcrumbs

Oil for frying (vegetable or canola oil)

1/4 cup honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 green onion, finely chopped (for garnish)

Instructions
 

Prepare the Salmon: Rinse the salmon pieces under cold water, pat them dry with paper towels, and set aside.

    Coat the Salmon: In a mixing bowl, combine flour, cornstarch, garlic powder, onion powder, salt, and black pepper. In another bowl, beat the egg and set aside. Place panko breadcrumbs in a separate dish.

      Bread the Salmon: Dip each salmon piece first into the flour mixture, then into the beaten egg, followed by the panko breadcrumbs, ensuring each piece is well-coated.

        Heat the Oil: In a large skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat until shimmering.

          Fry the Salmon Bites: Carefully place the coated salmon pieces into the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

            Prepare the Honey Garlic Sauce: In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Bring to a simmer and stir continuously for about 2-3 minutes, until slightly thickened.

              Toss the Salmon: Remove the sauce from heat and toss the crispy salmon bites gently in the saucepan until well coated.
