Ingredients

1 pound boneless, skinless chicken tenders

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably seasoned)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

½ cup marinara sauce (for dipping)

Fresh parsley, chopped (for garnish)

Olive oil (for frying)

Instructions

Prepare the Chicken: Rinse the chicken tenders under cold water and pat them dry with paper towels. Season them with salt and pepper on both sides.

    Set Up Breading Station:

      a. In a shallow bowl, place the flour.

        b. In another bowl, beat the eggs until frothy.

          c. In a third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried basil, dried oregano, and a pinch of salt and pepper.

            Bread the Chicken:

              a. Dredge each chicken tender first in the flour, ensuring it's fully coated.

                b. Dip it into the beaten eggs, allowing any excess to drip off.

                  c. Finally, roll it in the breadcrumb mixture, pressing gently to ensure an even coating.

Heat the Oil: In a large skillet, pour enough olive oil to cover the bottom (about ¼ inch deep) and heat it over medium heat until shimmering.

Fry the Chicken Fingers: Add the breaded chicken tenders to the skillet in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

Drain: Remove the cooked chicken fingers from the pan and place them on a paper towel-lined plate to drain any excess oil.

Serve: Arrange the crispy chicken Parmesan fingers on a platter. Serve hot with marinara sauce for dipping and garnish with chopped fresh parsley.
