2 large boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup breadcrumbs (Panko for extra crispiness)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 ripe avocados, sliced

1 cup cherry tomatoes, halved

½ cup lettuce, shredded

4 large flour or spinach tortillas

¼ cup ranch or chipotle sauce (for drizzling)

Olive oil for frying

Marinate Chicken: In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts, ensuring they are fully coated. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Prepare Coating: In two separate shallow dishes, place the flour in one and mix the breadcrumbs with a pinch of salt and pepper in the other.

      Coat Chicken: Remove chicken from the marinade and let any excess buttermilk drip off. First, dredge each piece in the flour to coat, then dip into the breadcrumb mixture, pressing it on to secure a good layer.

        Fry Chicken: In a large skillet, heat 1/4 inch of olive oil over medium-high heat. Once hot, add the coated chicken breasts. Cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature reaches 165°F). Remove and drain on paper towels.

          Prepare Wraps: Lay out the tortillas and place a handful of shredded lettuce on each. Add sliced avocado and halved cherry tomatoes. Slice the crispy chicken into strips and place on top of the veggies.
